We just poked around the house on Christmas Day. Steve went to go be with his kids Christmas morning. The rest of the day we just lounged!
New Years Eve was a quiet one. We just stayed home and watched tv. We didn't even make it to Midnight!! Ugghh do I feel old or what?
Yesterday we watched some marathons and made a sweet steak dinner with baked potatoes, fried onions/mushrooms, shrimp in garlic-butter sauce - it was sooo yummy!
Today we got up and it is put Christmas decorations away - major house clean day! (then it's back to work tomorrow= the five day a week until Memorial Day stint)
I got up this morning and made a Quiche! It was so good!! And very very easy~
Here is the recipe:
6 large eggs, beaten
1 1/2 cup heavy cream
salt and pepper
2 cups chopped baby spinich (packed)
1 pound bacon (or you can use ham or sausage) I used cubed ham
1 1/2 cups shredded cheese (I used cheddar for this quiche)
1 9" refrigerated pie crust fitted to a 9" glass pie plate
Preheat oven to 375 degrees
Combine the eggs, cream, salt and pepper in a food processor or blender. Layer the spinich, meat and cheese in the bottom of the pie crust, then pour egg mixture on top. Bake for 45 minutes until the egg mixture is set. Makes 8 pie shaped wedges!
That's it! Like I said, SO EASY!!
Then it was time to take down all the decorations and get them packed and put away. That didn't take too long, as we didn't have that many to begin with! Now we are doing some major deep down cleaning (OK, I snuck away for a little blog break and I'm pretty sure Steve is scrubbing down the kitchen because I can smell Mr. Clean! ) Coming baby!! Ha!
And then there is this.......... I am almost embarassed to post this picture, but I have been reading my daughters blogs and others about getting organized. I think I have my work cut out for me on this one. I will save this room for last today, but I am determined to get it under control again!
In amongst ALL the clutter, did you notice my little webcam? I have gotten all hooked up with Skype, I'm just waiting for Jodi and Jamie to do the same so we can start Skyping! I'm excited!
Oh, did you also notice the can of Pledge and my dust rag? That should tell you that I mean business! This room is MINE!
I hope everyone had a Verry Merry Christmas and a Happy New Year! God Bless!
